Wild Game Dinners
(All Wild Game Must Be Provided by Host)

Hors d’ Oeuvres:
(Choose two or three items to be passed)

Almond Crusted Duck Breast with Thai Sweet Chili Sauce
Venison Sausage stuffed Mushrooms
Venison Phiroski
Fried Alligator (I can buy this from our local game management officer)
Wild surf and turf (Bacon wrapped Venison stuffed with Shrimp)

Dinner Buffet:

Duck Cordon Bleu with Raspberry Merlot sauce
Grilled Oriental Quail
Venison Meatballs with choice of sauces
Lowcountry Shrimp and Grits (I like to have at least one non game item for those who don’t like game)
Pan Seared Pheasant Breast with Brandied Cream Sauce

Plantation Rice Pilaf
Yellow squash and Zucchini Casserole Gratin

Pecan Tarts and Carrot Cake Squares

All Game Menus will be decided upon and will be based on availability and quality of game provided by Host.
Some game available from Game Farms, but must be shipped overnight to Caterer.

Buffet Dinner:
Choose two entrée’ selections;
one vegetable; one starch;
one salad and two dessert selections
